Full of protein, iron and anti-oxidants, it’s a great way to start off any morning or use as a mid-morning or mid-afternoon pick-me-up.
Containing blueberries, a great anti-oxidant and anti-inflammatory superfood, as well as spinach which is rich in iron and potassium, throwing in a scoop of protein powder and some plant-based milk makes this beverage a guilt-free, totally vegan, and tasty way to start your day.
Vegan Blueberry Protein Smoothie
Ingredients
1 c plant based milk of your choice (almond, oat, hemp, etc.)
1 c frozen blueberries
2 c fresh spinach
1 scoop vanilla protein powder
1 T. agave nectar (optional)
Directions
Pour milk into blender, then frozen blueberries, protein powder, and spinach. Add agave if desired. Blend until blueberries and spinach have liquefied, but mixture is still somewhat thick. Pour and serve. Makes 2 cups.
Options:
Half of a banana or avocado, or 1/4 of non-dairy plain or vanilla yogurt can be added to increase thickness. Other options to increase nutritional value can include 1 teaspoon of ground flaxseed or 1-2 tsp. of walnuts or almonds.
