Macaroni and cheese is one of those comfort foods that most people love and some just can’t get enough of. Some might indulge every once in a while as “comfort food” should be enjoyed (as a treat), and others make it a staple of their diet and eat it at least once a week.
As a vegan, especially for those new to the lifestyle, the hope that the creamy, tangy, warm deliciousness of the dish could be duplicated without the use of any dairy product might seem impossible, and a favorite they would just have to resign themselves to never having again.
I vaguely remembered having had this Amy’s product before, but I honestly couldn’t remember everything about the taste of it. However, this time around, things were much different! I purchased a box with the mission to give it my undivided attention and boy was I glad I did!
I decided to microwave it (the other two options being a conventional oven or a toaster oven). The other thing I did was to not quite follow the package directions during cooking. I removed the plastic wrapper, of course, but where it instructs to stir after three minutes cooking, and then cook for one to two minutes more, I simply put it on for five minutes and did not stop the cooking process to stir.
After I removed it, the macaroni looked pretty much like it should. I tasted a little without any doctoring to get a sense of its true taste. I was very pleasantly surprised!
In all honesty, I expected it to have a sticky, odd yellow colored “cheese” with a bit of a strange aftertaste. Instead, I was tasting a creamy, cheesy tang like I remembered from my pre-vegan days. The pasta was just the right al dente texture and that wonderful, yellow, goopy stuff was clinging to it just right.
Once I had the first taste of it on its own, I seasoned it to taste. For me, that simply meant a little salt and pepper and i was back to digging in again. I savored every bite. This is not the sort of dish some might be eating too often as it is rich and high in calories and carbs if you are watching those things. If you’re not, well, all I can say is there is an option out there for you when it comes to enjoying one of the best comfort foods of all time.
I know that this will be a staple in my freezer when it comes to having something on hand to reach for when I’m looking for the occasional indulgence. Mind you, I won’t always be serving it up on its own, I will probably be mixing in some broccoli or serving it up with a salad. However, I do love the idea of knowing that when I truly need “comfort”, I can sink into one of my favorite dishes, courtesy of Amy’s. I shall be forever grateful!
