One day I was browsing the aisles of Trader Joe’s, when I came across Trader Joe’s Miso Ginger Broth. It was a decent size carton (32 oz.), and a decent price; it was also intriguing. I wondered how flavorful it would be as my mind raced with ideas of things I could put in it.
When I got home, I tasted some, heated up, in a mug. There wasn’t too strong a taste of ginger, which was good, as I had been concerned about it being overpowering. There was just enough. The taste was light and pleasant. While some might feel that, from the name and main ingredients, it’s only suitable for use in Asian dishes. In fact, this could easily be used instead of regular vegetable broth.
I did decide to make a soup using vegetables from a stir-fry mix, along with some seasonings, and it tasted pretty good. What was left over, i threw a few spoonfuls of rice in the next day to finish it up, and had another great meal.
There are about 4 servings in there if you are wanting to use about a cup of broth per person, and each cup contains only 10 calories. Along with miso and ginger, there is a vegetable puree of onions, carrots, and celery, shiitake extract, and salt. For those concerned with sodium content, it comes in at 590mg per serving, zero cholesterol and fat, 1 gram of protein and 1 gram of carbohydrate.
